Peanut Butter Power Muffins

  • Ingredients

    1 ¾ cups flour
    2 scoops vanilla protein powder
    1 ½ teaspoons baking soda
    ½ teaspoon salt
    1 cup mashed banana (about 3)
    ½ cup honey
    ½ cup SKIPPY® Natural Peanut Butter Spread
    2 eggs
    ⅓ cup vegetable oil
    ¼ cup brown sugar
    1 teaspoon vanilla

    Streusel Topping

    ⅓ cup brown sugar
    2 tablespoons flour
    ⅛ teaspoon cinnamon
    2 tablespoons rolled oats
    2 tablespoons butter
  • Instruction

    1. Heat oven to 400° F. Line a 12-cup muffin pan with paper liners.
    2. In medium bowl, combine 1 ¾ cups flour, protein powder, baking soda and salt.
    3. In large bowl, beat together mashed banana, honey, peanut butter, eggs, oil, brown sugar and vanilla. Beat in flour mixture until just combined. Spoon batter evenly into muffin cups.
    4. In small bowl, combine streusel topping ingredients with fork until crumbly. Sprinkle topping evenly over the tops of batter in muffin cups.
    5. Bake 18 to 20 minutes or until wooden pick inserted in center of muffins comes out clean.
