Peanut Butter-Stuffed Peanut Butter Cookies

  • Ingredients

    1 cup SKIPPY® Chunky Peanut Butter
    ½ cup butter, softened
    1 cup light brown sugar
    1 large egg, lightly beaten
    1½ teaspoons vanilla extract
    1 2/3 cups all-purpose flour
    ½ cup finely chopped peanuts
    1 teaspoon baking soda
    ½ teaspoon kosher salt
    ¼ cup granulated sugar
    1 teaspoon ground cinnamon
     
  • Instruction

    1. Heat oven to 350°F.
    2. In large bowl using hand mixer cream peanut butter, butter and brown sugar until light and fluffy. Add egg and vanilla extract until combined.
    3. In small bowl, combine flour, peanuts, baking soda and salt. Gradually add flour mixture to peanut butter mixture and mix just until flour is incorporated.
    4. In small bowl, combine sugar and cinnamon.
    5. Scoop heaping tablespoon cookie dough and flatten. Top with truffle and wrap dough to completely seal.
    6. Roll in cinnamon-sugar mixture and place on parchment paper-lined baking sheet.
    Bake 10 minutes or until edges are set. Let stand 5 minutes before transferring to wire rack to cool.
