Peanut Butter French Toast with Caramelized Bananas

  • Ingredients

    ½ cup SKIPPY® peanut butter
    ½ cup heavy whipping cream
    3 large eggs
    2 teaspoons vanilla extract
    1 tablespoon honey
    ¼ cup butter, melted divided
    2 tablespoons light brown sugar
    2 bananas, sliced
    8 (1-inch thick) slices French bread

  • Instruction

    1. In food processor, combine peanut butter and next 4 ingredients; process until smooth. Transfer mixture to a shallow dish.
    2. Prepare griddle for medium heat. Brush griddle with 2 tablespoons butter. Dip bread slices in peanut butter mixture, shaking off excess and cook 2 to 3 minutes on each side or until golden. Keep warm
    3. In medium bowl, stir together remaining 2 tablespoons melted butter, brown sugar and banana slices. Cook banana slices on griddle until browned. Spoon over bread slices. 
    4. Peanut Maple Drizzle: In small microwave safe bowl, combine ½ cup maple syrup and ½ cup Skippy® creamy peanut butter. Heat on HIGH 1 minute or until heated through, stirring to combine. Serve over Peanut Butter French Toast.
