Quick Flourless Peanut Butter Muffins

  • Ingredients

    1 cup SKIPPY® Natural peanut butter spread
    2 large eggs
    2 medium-sized very ripe bananas
    ½ teaspoon baking soda
    1 teaspoon vanilla
    2 tablespoons honey
    Optional toppings of choice: dark chocolate morsels, raisins, blueberries
  • Instruction

    1. Heat oven to 400°F.
    2. In blender, add peanut butter and next 5 ingredients. Blend until smooth. Pour batter into lightly greased standard size muffin tin.
    3. Top with desired toppings and bake to 12 minutes or until cake tester inserted in center comes out clean.
