Peanut Butter Brown Rice Bars with Chocolate

  • Ingredients

    2 ½ cups puffed brown rice cereal
    ½ cup SKIPPY® Natural Peanut Butter Spread
    ⅓ cup pure maple syrup
    2 tablespoons plus 1 teaspoon coconut oil, divided
    ¼ teaspoon salt
    1 cup dark chocolate chips
  • Instruction

    1. Lightly grease 8x8-inch pan.
    2. In large bowl, place puffed brown rice cereal.
    3. In small saucepan, heat peanut butter, maple syrup, 2 tablespoons coconut oil and salt. Bring mixture to a boil whisking frequently.
    4. Pour over cereal, stirring until well coated. Immediately transfer to prepared pan. Press lightly with a greased rubber spatula. Let stand 1 hour.
    5. In small microwave safe bowl, heat chocolate chips and remaining 1 teaspoon coconut oil on HIGH 30-45 seconds, or until melted and smooth. Spread over bars. Refrigerate 30 minutes. Cut into 16 squares.
