Peanut Butter Cocoa Chia Pudding Parfait

  • Ingredients

    1½ cups almond milk, divided
    ¼ cup maple syrup, divided
    6 tablespoons chia seeds, divided
    3 tablespoons SKIPPY® creamy peanut butter
    2 tablespoons cocoa powder
    ¼ teaspoon vanilla extract
    ¼ teaspoon kosher salt
    Garnish: coconut flakes, banana slices, fresh blueberries and toasted sliced almonds

  • Instruction

    1. In small bowl combine 1 cup milk, 2 tablespoons maple syrup and 4 tablespoons chia seeds. Cover and refrigerate 4 hours or up to overnight.
    2. In small bowl combine peanut butter, cocoa powder, remaining 2 tablespoons maple syrup until paste forms. Gradually whisk in remaining ½ cup almond milk and remaining 2 tablespoons chia seeds until well blended. Stir in vanilla extract and salt. Cover and refrigerate 3 hours or up to overnight.
    3. Spoon mixtures alternately into parfait glasses. Garnish, if desired.
