Summer Rolls with Peanut Dipping Sauce

  • Ingredients

    Dipping Sauce:
    2 tablespoons SKIPPY® Creamy Natural Peanut Butter Spread
    ¼ cup seasoned rice vinegar
    2 tablespoons HOUSE OF TSANG® Hoisin Sauce
    2 teaspoons HOUSE OF TSANG® Soy Sauce
    1 teaspoon Sriracha hot sauce
    2 tablespoons water
    Garnish: chopped dry-roasted peanuts

    Summer Rolls:
    8 spring roll rice paper wrappers
    1 cup matchstick carrots
    1 cucumber, julienned
    1 red bell pepper, thinly sliced
    1 cup finely shredded cabbage (green or purple)
    1 mango, peeled and sliced
    ½ cup fresh cilantro leaves
  • Instruction

    Dipping Sauce:
    In small bowl, combine peanut butter and remaining ingredients. Garnish with peanuts, if desired.

    Summer Rolls:
    1. Soak wrappers according to package directions.
    2. Layer each wrapper with carrots and remaining ingredients. Fold ends and roll to secure.
    3. Cover with damp cloth and refrigerate until ready to use.

    Serve with peanut dipping sauce.
