8 | spring roll rice paper wrappers |
1 | cup matchstick carrots |
1 | cucumber, julienned |
1 | red bell pepper, thinly sliced |
1 | cup finely shredded cabbage (green or purple) |
1 | mango, peeled and sliced |
½ | cup fresh cilantro leaves |
In small bowl, combine peanut butter and remaining ingredients. Garnish with peanuts, if desired.
Soak wrappers according to package directions.
Layer each wrapper with carrots and remaining ingredients. Fold ends and roll to secure.
