Enjoy a refreshing and flavorful Beef and Mango Salad with Peanut Dressing!
This salad combines tender grilled steak marinated in a mixture of SKIPPY® SUPER CHUNK® Natural Peanut Butter Spread, garlic, ginger, and lime, with fresh baby romaine lettuce, sweet mango slices, and crunchy toasted peanuts. The peanut dressing, made with peanut butter, lime juice, honey, and oil, adds a rich and tangy flavor that perfectly complements the savory steak and sweet mango.
¾ | cup SKIPPY® SUPER CHUNK® Natural Peanut Butter Spread, divided |
4 | cloves garlic, minced |
1 | tablespoon finely grated peeled ginger root |
2 | teaspoons finely grated lime peel |
½ | cup plus 3 tablespoons lime juice, divided |
1 | pound New York or rib steaks |
½ | cup sliced red onion |
2 | mangoes, peeled, pitted and sliced |
⅓ | cup toasted peanuts |
¼ | cup canola or peanut oil |
2 | tablespoons honey |
Baby romaine lettuce leaves | |
Salt and freshly ground pepper, to taste |
To make marinade, in large bowl, combine 1/2 cup peanut butter spread, garlic, gingerroot, lime peel and 1/2 cup lime juice; mix well.
Cut steaks on angle into 5 or 6 pieces each. Add to marinade; toss to combine.
Prepare grill for medium heat. Grill steak 1 to 2 minutes on each side or until cooked to desired doneness.
Arrange romaine, onion, mangoes and steak on 4 individual serving plates. Sprinkle salads with peanuts.
To make dressing, in small bowl, whisk together remaining 1/4 cup peanut butter spread, oil, remaining 3 tablespoons lime juice, honey, salt and pepper. Drizzle evenly over salads.
