Peanut Butter and Apple Cinnamon French Toast Roll-ups are a delightful twist on a classic breakfast favorite. ¼ | cup butter, divided |
2 | apples, peeled and chopped |
¼ | cup sugar, divided |
1 | teaspoon cinnamon, divided |
2 | eggs |
⅓ | cup milk |
1 | teaspoon vanilla |
¼ | teaspoon salt |
12 | slices of your preferred bread |
½ | cup SKIPPY® Creamy Peanut Butter |

In small saucepan over medium heat, melt 2 tablespoons butter. Add apples, 2 tablespoons sugar and ½ teaspoon cinnamon. Cook, stirring, 4 to 6 minutes or until apples are softened. Set aside.
In shallow dish, whisk together eggs, milk, remaining sugar, vanilla, remaining cinnamon and salt until completely combined.
Using a rolling pin, roll each slice of bread to flatten. Trim the crust off each slice.
Spread 2 teaspoons peanut butter in a 1-inch strip along the bottom of bread slice. Top peanut butter with some apple mixture. Carefully roll into a tight log so that the filling is wrapped in bread. Repeat with remaining ingredients to make 12 roll-ups.
Dip each roll-up in egg mixture, turning to coat.
In large nonstick skillet over medium heat, melt 1 tablespoon butter. Working in batches, cook roll-ups 1 to 2 minutes, turning as needed until golden brown, adding more butter to cook remaining roll-ups.
