These bars feature the nutty goodness of SKIPPY® Natural Peanut Butter Spread mixed with puffed brown rice cereal and sweetened with pure maple syrup. Topped with a smooth layer of dark chocolate, these bars are a delightful treat for peanut butter lovers, ready in just 20 minutes.
2½ | cups puffed brown rice cereal |
½ | cup SKIPPY® Natural Peanut Butter Spread |
⅓ | cup pure maple syrup |
2 | tablespoons plus 1 teaspoon coconut oil, divided |
¼ | salt |
1 | cup dark chocolate chips |
Lightly grease 8×8-inch pan.
In large bowl, place puffed brown rice cereal.
In small saucepan, heat peanut butter, maple syrup, 2 tablespoons coconut oil and salt. Bring mixture to a boil whisking frequently.
Pour over cereal, stirring until well coated. Immediately transfer to prepared pan. Press lightly with a greased rubber spatula. Let stand 1 hour.
In small microwave safe bowl, heat chocolate chips and remaining 1 teaspoon coconut oil on HIGH 30-45 seconds, or until melted and smooth. Spread over bars. Refrigerate 30 minutes.
Cut into 16 squares.
