1¼ | cups SKIPPY® Peanut Butter, divided |
1 | cup sugar |
1 | large egg, lightly beaten |
½ | teaspoon baking soda |
¼ | teaspoon kosher salt |
½ | (8-ounce) package cream cheese, softened |
½ | cup powdered sugar |
Heat oven to 350°F.
In large bowl, combine 1 cup peanut butter and next 4 ingredients until blended.
Shape into 1-inch balls and place on parchment paper-lined baking sheet.
Bake 15 minutes. Remove to wire rack to cool completely.
In small bowl, stir together remaining ¼ cup peanut butter, cream cheese and powdered sugar until smooth.
Spread cream cheese mixture on flat side of half the cookies. Sandwich with remaining cookies.
