8 | ounces pasta of choice, cooked and drained |
¼ | cup coconut oil, divided |
½ | cup chopped onion |
½ | cup chopped red bell pepper |
3 | garlic cloves, minced |
1-inch slice fresh ginger, minced | |
1 | (15-ounce) can coconut milk |
1 | tablespoon SKIPPY® Creamy Peanut Butter |
½ | cup (packed) fresh basil leaves, thinly sliced |
Suggested garnish: Fresh basil, red pepper flakes, chopped peanuts and lime wedges |
Combine all ingredients.
In large skillet, over medium-high heat, heat 1 tablespoon coconut oil.
Add onion and red bell pepper. Cook 3 to 5 minutes or until beginning to brown. Add garlic and ginger. Cook 1 minute.
Make a well in the middle of the skillet, add remaining coconut oil and Curry Blend Spice Mixture, stirring to form a paste. Add coconut milk and peanut butter. Stir to combine. Let simmer 3 to 5 minutes. Stir in cooked pasta and sliced basil, tossing well. Serve with suggested garnish.
