Peanut Curry Pasta

Ingredients

Pasta

  • 8 ounces pasta of choice, cooked and drained
  • ¼ cup coconut oil, divided
  • ½  cup chopped onion
  • ½  cup chopped red bell pepper
  • 3 garlic cloves, minced
  • 1- inch slice fresh ginger, minced
  • 1 (15-ounce) can coconut milk
  • 1 tablespoon SKIPPY® Creamy Peanut Butter
  • ½ cup (packed) fresh basil leaves, thinly sliced
  • Suggested garnish: Fresh basil, red pepper flakes, chopped peanuts and lime wedges

Curry Blend Spice Mixture

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon curry powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon nutritional yeast
  • 1 teaspoon dried coriander

Directions

Pasta 

  1. In large skillet, over medium-high heat, heat 1 tablespoon coconut oil. Add onion and red bell pepper. Cook 3 to 5 minutes or until beginning to brown. Add garlic and ginger. Cook 1 minute.
  2. Make a well in the middle of the skillet, add remaining coconut oil and Curry Blend Spice Mixture, stirring to form a paste. Add coconut milk and peanut butter. Stir to combine.  Let simmer 3 to 5 minutes. Stir in cooked pasta and sliced basil, tossing well. Serve with suggested garnish.
